The Guinness gives the soup an extra bit of earthiness. It won’t leave you overwhelmed by beer.
Be sure that you get stout, not draught. Draught won’t kill your soup if that’s all you have – but it will be much more mild.
This can also be a beer-less hamburger soup, if you prefer. Just leave out the stout and add a bit of extra broth.
I use chicken broth even in my beef stews because I love the taste of it. If you’d rather use beef broth (which is probably the more proper thing to use in a soup like this), then go right ahead.
If you prefer ground turkey to beef, you can use it.
You can also make this in the instant pot or stove top.
Slow Cooker Guinness Hamburger Soup

Ingredients
- 3 lbs ground beef
- onion powder
- 1 onions, diced
- 6 sprigs celery, sliced
- 6 large carrots, peeled and sliced
- 2 lbs golden potatoes, chopped into bite-sized pieces
- 64 oz chicken broth
- 28 oz canned diced tomatoes
- 1 bottle Guinness Extra Stout *see note in blog post
- 2 tbsp Worcestershire sauce
- grated cheddar, smokey cheddar or Parmesan cheese to serve (optional)
Instructions
- Brown the meat in a skillet and season to your liking with salt, pepper and onion powder.
- When the meat is 3/4 cooked, add the onion, celery and carrot. Cook until vegetables soften. Drain off any fat in the pan.
- Add the meat and vegetables to the slow cooker with all of the other ingredients.
- Cook on HIGH for 4 hours.
- Add salt to taste (if needed) before serving.
