Slow Cooker Guinness Hamburger Soup

Servings 8

Ingredients

  • 3 lbs ground beef
  • onion powder
  • 1 onions, diced
  • 6 sprigs celery, sliced
  • 6 large carrots, peeled and sliced
  • 2 lbs golden potatoes, chopped into bite-sized pieces
  • 64 oz chicken broth
  • 28 oz canned diced tomatoes
  • 1 bottle Guinness Extra Stout *see note in blog post
  • 2 tbsp Worcestershire sauce
  • grated cheddar, smokey cheddar or Parmesan cheese to serve (optional)

Instructions

  • Brown the meat in a skillet and season to your liking with salt, pepper and onion powder.
  • When the meat is 3/4 cooked, add the onion, celery and carrot. Cook until vegetables soften. Drain off any fat in the pan.
  • Add the meat and vegetables to the slow cooker with all of the other ingredients.
  • Cook on HIGH for 4 hours.
  • Add salt to taste (if needed) before serving.
