This takes about 5 minutes to prep. Just dump everything in the pot in the morning and go. This can also be done on the stove top or instant pot.
This concoction came about when I was making my usual taco soup and realized that I was missing chili powder. People seem to like this version even better than the standard taco soup.
If you want to make this but you do not have Tajin, you can make regular taco soup with taco seasoning, and if you want to add a splash of lime to that, you can.
Tajin can be found in the Mexican section of the grocery store. It is a chile lime-flavored spice that also makes a nice rub for chicken.
Slow Cooker Chicken Lime Tortilla Soup
Ingredients
- 1 onion, chopped
- 1 28oz can crushed tomatoes
- 1-2 cans diced green chiles
- 48 oz chicken broth
- 2 15oz cans of beans, drained kidney, black, your choice
- 1-2 cups corn kernels (frozen is fine)
- 5 lbs chicken breast
- 2 tbsp Tajin
- 1.5 tsp salt
- 2 limes
- cilantro, shredded cheese, crushed tortilla chips, avocado, lime wedges, Valentina optional garnish
Instructions
- Place all ingredients (except for the limes and garnishes) in the slow cooker.
- Cook on high for 4 hours.
- Remove the chicken to a cutting board and shred with two forks.
- Dump the chicken back in the soup.
- Squeeze the juice from two limes over the soup.
- Serve with garnishes.
Notes
Feel free to substitute 8oz of the chicken broth for a bottle of Corona. Or just use any light-tasting beer. No Sam Adams, or any of those muddy types that taste like they came out of a boot.
This soup makes a large batch (15 servings). It also comes out almost stew-like due to the amount of chicken. If you do not want to make that much at once, you can halve the recipe or use less chicken.
