Fried Rice

This is quick to throw together with leftovers.

If you don’t have any leftover meats, you can just stir-fry something in a pan after you cook the eggs and onion.

A rice cooker gives perfect rice every time.  They are fairly inexpensive now that everyone wants an instant pot.

Fried Rice

Servings 6

Ingredients

  • 4 cups cooked white rice
  • 1-2 tbsp peanut or sesame oil
  • 1 onion, diced
  • 6 eggs
  • 2 lbs leftover protein, cooked and chopped (chicken, shrimp, pork, etc.)
  • 1 16oz bag frozen mixed vegetables
  • more vegetables optional (snow peas, bell peppers, mushrooms, chopped carrots, etc.)
  • 6 stalks of scallion, chopped
  • 4+ tbsp coconut aminos or soy sauce
  • Sriracha mayonnaise or duck sauce

Instructions

  • Saute the onion in a pan for 2 minutes. 
  • In the same pan, scramble the eggs, then incorporate with the onion.
  • Add the meat to the pan, along with the mixed vegetables, and any other vegetables you'd like to use. Cook for just a few minutes – until the vegetables are heated/thawed, but not mushy.
  • *If you didn't have any leftover meat handy, then remove the onion and egg from the pan and stir fry the meat. Then return the onion and egg to the pan with the meat, and add the vegetables.
  • Add the soy sauce or coconut aminos.
  • Add the rice to the pan and stir to incorporate.
  • Add more soy sauce or coconut aminos to taste.
  • Stir in the chopped scallion.
