Quick Seafood Paella

If you are averse to tentacles, you can use chicken, sausage, shrimp, or whatever other protein sources you would like.

Aldi has these frozen mussels that you just pop in the microwave. They are actually delicious. If you do not feel like going to the store to get them fresh, the frozen option can give you perfect mussels at a moment’s notice.

Quick Seafood Paella

Servings 6

Ingredients

  • 2 7 oz boxes Spanish yellow rice
  • 1-2 tbsp olive oil
  • 5 cloves garlic, minced
  • 16 oz frozen mixed seafood, thawed
  • 16 oz shrimp
  • 1 lb mussels in shells, fresh OR frozen
  • 1/8 tsp red pepper flake
  • adobo
  • 2 tbsp dry white wine
  • parsley, scallion, or fresh bell peppers (optional)

Instructions

  • Cook rice according to package directions.  If you are watching your salt, only use half of the seasoning pack that comes with it.
  • Heat oil in a pan over medium-high heat.
  • Add the garlic and cook until softened and fragrant.
  • If you are using fresh mussels, steam them separately.
    If you are using frozen microwaveable mussels, prepare according to package directions.
  • Add the the mixed seafood and shrimp to the pan.
  • Sprinkle with adobo and a touch of red pepper flake. Cook until shrimp turns pink and seafood is cooked through. If a lot of liquid comes off as you are cooking, just drain it off.
  • Add the mussels.
  • Add a splash of wine and cook for another minute.
  • Remove the seafood from the pan with a slotted spoon. Serve the seafood over the rice, or mix it all up together.  
  • Top with chopped parsley, scallion, or fresh sliced bell peppers if you'd like.

(If this is more calorie-intense you’d like, just skew your bowl to have more of the seafood than the rice.)
